How to Make Purple Mike Cookies

This was an experiment to create the world’s most delicious flavor of little tea cookies. I mixed the ingredients and divided the dough into three bowls. The first bowl was plain. The second bowl had a sprinkle of cinnamon. The third bowl had some molasses.

Ingredients:
1 cup vegetable oil
1 cup sugar
2 eggs
1 teaspoon vanilla
2 cups self-rising flour

The cookies looked weird after baking for a few minutes and flattened into squares. The recipe called for a half cup of oil and I started to feel guilty thinking my entire family would have high cholesterol problems.

Directions:
In a mixing bowl, whisk oil, sugar, eggs and vanilla together.
Stir in self rising flour.
Drop by teaspoonfuls onto ungreased cookie sheet.
Slightly flatten dough.
Bake at 350 degrees for 10-12 minutes.

I baked them a few minutes minutes longer than the recipe required. The hardest part was scraping them out of the pan. Wouldn’t all that oil encourage them to slide out easily?

They weren’t as attractive as I hoped, even though I scattered a generous amount of purple sprinkles. The cinnamon might be a good holiday favorite, and tasted like a snickerdoodle. The plain one turned out a little crunchy, and was a little boring. The molasses one was nice and chewy, but it was hard to see the purple sprinkles. I loved the flavor, of course one has to be a molasses fan. It was also the one that I had to fight to remove from the pan.
